Are these legal? Because I’m not so sure.
I mean, can anything this good be anything but illegal? Crunchy breadcrumb/parmesan outside with a soft, baked zucchini inside.
They’re incredible. They’re ridiculously easy to make. They’re addictive.
But wait! Don’t call the cops just yet. I want to share it with you. Because that’s what friends do. Friends exchange greatness with each other.
And a little secret? They’re unbelievably great with tomato sauce dip. One bite and you’ll think you’re in an Italian restaurant.
Baked Parmesan Zucchini Sticks
(adapted from Aggie’s Kitchen)
Ingredients
- 3 large zucchini, sliced longways, halved and cut into sticks
- 2 eggs
- 1/2 cup plain bread crumbs
- 1/4 cup Parmesan cheese, grated
- 1 tsp dried oregano
- 1/2 tsp dried garlic powder
- Olive oil spray
Instructions
- Preheat oven to 425 degrees. Spray olive oil spray on large baking sheet. Set aside.
- Slice zucchini into long planks. Cut planks in half then slice long into sticks.
- In large shallow bowl, whisk together 2 eggs, set aside. In large shallow dish, combine breadcrumbs, Parmesan cheese, oregano and garlic powder.
- Working with 3-4 zucchini sticks at a time, start breading process by dunking and completely covering zucchini with egg mixture. Take zucchini sticks out of egg mixture, allowing an extra egg to drip off, and place into breadcrumb mixture. Gently coat the zucchini stick completely with breadcrumb mixture. Place breaded zucchini stick onto baking sheet.
- Continue this process until all zucchini sticks are breaded and on baking sheet. Spray each zucchini stick with olive oil spray and place into 425 degree oven. Bake for approximately 10 minutes or until bottoms are golden brown. Using a spatula, flip each zucchini stick and bake for an additional 10 minutes or until crisp and golden brown.
wow. those look delicious! hubby isn’t a fan of zucchini – but he likes the breaded sticks so i think he’d be a fan of these as well! love it! going to definitely try these!

What and absolutely perfect appetizer for my book club next week. Yours looked just lightly browned to perfection and I absolutely LOVE that these are baked not fried so they are a little healthier.

Wow! They look sooo yummy! I am a big fan of zucchini, but usually run out ways to make it. I will be adding this to the list!
I often have a hard time getting on the zucchini wagon – but cover something in breadcrumbs and cheese and there’s a 97% chance I’m going to eat it. No matter what it is.
Baked zucchini sticks are also a favorite of mine! I like to serve them with homemade ranch dressing, but marinara sauce sounds fantastic too!

I have had zucchini fries (pure Heaven) but these look just as good! I agree that tomato sauce is the perfect dip for these guys. Will have to try these out sometime :)

I’ll have to try these with the breadcrumbs! I make mine with panko and melted parm on top but breadcrumbs would be a nice change of pace! =) I love mixing up the same recipe over and over with different variations =)

I have to say that this zucchini was DELICIOUS!! I took them out of the oven and just kept eating them, one after the other – so addicting! They never even made it into the marinara! The family love them, too. Thanks so much for sharing. I will DEFINITELY be making these again.
