No-Bake Strawberry Pie

Sometimes I just can’t muster up the motivation to blog.

I have to bake something new, take decent pictures, edit said-pictures, and write an entire blog post about it. Also, I tend to get lazy once I’ve watched a 3-day Harry Potter movie marathon (even though the books are 100x better).

My laziness is precisely the reason you should subscribe to the blog by email (found on the right side >>) and/or like the page on Facebook…yes, it sounds like I’m spamming, but believe me, it’s far easier than checking the site to see if I’ve updated. I’m not very dependable.

But! When I am dependable, I tend to make really delicious things. Take this strawberry pie for example. But no oven for this pie, no sir–this is a no-bake strawberry pie!

The advantages of strawberry pie:

  1. It’s easier than apple pie. You don’t have to peel/dice the strawberries–only halve them.
  2. No butter required! Which means less fat…which means more pieces for you.
  3. You don’t bake it. Just bake the crust while you’re preparing the filling.
  4. It’s unique and full of greatness. When was the last time you heard of strawberry pie?

And it will probably bring smiles to your family’s faces. :)

Strawberry Pie (slightly adapted from allrecipes.com)

Ingredients

  • 1 (9 inch) pie crust, baked
  • 4-5 cups fresh strawberries
  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water (a little more if needed)

Directions

  1. Bake pie crust for 10-15 minutes in preheated oven of 350 degrees F, until golden.
  2. Remove leaves, then wash and halve strawberries. Save the pretty ones for arranging (enough to fill the crust) and use the not-so-pretty for the sauce.
  3. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat.
  4. In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture and bring to a boil for 2-3 minutes. Reduce heat and simmer mixture until thickened, stirring constantly.
  5. Arrange one layer of fresh berry halves on the crust, then drizzle over the layer. Place another layer of fruit, and then sauce again, repeat until the pie crust won´t hold any more layers.
  6. Chill for several hours before serving.

  10. Looks great! And I love that it’s a no-bake. That way the strawberries can stay fresh. I think this would be good for breakfast…or is that just my stomach growling?

    I love watching tapes especially those drama series. It’s fun! I love watching with my kids. We normally have such a great time laughing till the end of each stories.ha… My kids love Harry Potter but not crazy. It was ok!     I feel for you with the laziness, guess it happens to all of us! :) For me working with photographer and keeping a google calendar does help, giving a bit of structure it.

    This looks glorious, but unfortunately preprepared pie crusts are hard to come by here :( Which means that I’d probably still go to a cafe and buy this rather than make it, as I have a deathly fear of making pastry! :P I swoon for those strawberries though!
